Crushed Potatoes

These are easy to make, customizable, and extremely delicious. I drew inspiration from the Pioneer Woman’s Crash Hot Potatoes recipe. Depending on your toppings, Crushed Potatoes make an excellent side or main dish!

Instructions
  1. Preheat oven to 475ยบ F.
  2. Scrub potatoes, poke 1-2 holes in them, and heat in microwave (on high) for 6 minutes or until soft.
  3. Place softened potatoes on baking sheet and gently smoosh them down with a potato masher.
  4. Top each potato with buttery spread, sprinkle with salt and pepper, then top with dairy-free cheese shreds. Bake in oven for 10-15 minutes or until crisp.
  5. Pull potatoes from oven and top with any remaining ingredients you've chosen (bacon, chives, etc). Serve while warm.
