Ingredients

Instructions
  1. Preheat oven to 375º Fahrenheit.
  2. Combine rice flour, tapioca flour, sugar, baking powder, and salt in a medium bowl. Make a well by pushing ingredients to the side of the bowl.
  3. Combine almond milk, oil and egg in a small bowl. Beat until well blended.
  4. Add milk mixture to the flour mixture, all at once, and stir. Then, add in mashed bananas and stir until moistened.
  5. Spoon into greased or paper-lined muffin pans, filling 2/3 full.
  6. Bake 20 minutes in the oven, or until golden and a toothpick inserted near the center comes out clean.
Recipe Notes

**To make blueberry muffins, raspberry muffins, chocolate chip muffins, etc: increase almond milk to ½ cup and add desired ingredients after step 3.
(Substitute desired ingredient for banana.)
